Venison meat, just as other sausages are lean therefore you have to add fat when you make it into a sausage. According to some meat experts, venison meat has a more distinct and strong flavor compared to other meats. This means that you have to use a lot of spices but not too much that you would drown the meats' natural flavor.
Before you start cooking venison sausage, prepare first all the ingredients and the materials needed for cooking. For starters, you will be needing 10 lbs. of ground venison, 5 lbs. of ground pork, 4 tbsp. of mustard powder, garlic, salt, hickory, sausage casing, and smoke salt. The amount of spices you will be using depends on the taste that you want to achieve.
After gathering all the ingredients, you can start by mixing carefully the ground venison and pork in a bowl. Add the mustard powder, garlic, salt, hickory, and smoke salt on the mixed meat. You can also add a little bit of pepper to make it spicy. When you're already satisfied with the taste, cover the container and place it inside the fridge for 24 hours.
When the 24-hour period has gone by, you can now take out the bowl from the fridge. Then place the meat inside the meat casing carefully so that it won't rip apart.
There are a lot of processes or recipes available in cooking venison sausage. One of the most popular method is through baking. This requires a preheated oven at about 140 F with the cooking time of eight hours. Place the sausages on the rack and maintain proper spacing in between the sausages. Cooking venison sausage can also be done at 280 degrees for about 4 hours cooking time.
Another process of cooking venison sausage is by frying. The process is very easy, just preheat the pan and add some oil. Place the sausage on the pan and cook it with medium heat. While frying, slowly roll the sausages so that it won't get overcooked or burnt. If the sausage is already cooked, drain its oil by placing it on a paper towel.
Cooking venison sausage can also be done through steaming. You can add flavor by adding some berries, wine, or other beverage of your choice. Also, try steaming it with beer for about ten minutes. After doing so, you can now hit the grill with your sausage for about a few minutes.
