Ingredients:

? 4 tablespoon of butter
? 1 huge onion that is finely chopped
? 1/2 cup celery, chopped
? 1/4 cup red bell pepper, chopped
? 1/4 cup all purpose flour
? 3 cups chicken broth
? 1 large baking potato, diced and peeled
? 1-1/2 up to 2 cups of diced chicken
? 1 pound asparagus, sliced with length1/2 inch, without woody ends
? 2 cups of heavy cream
? 1 teaspoon salt to add taste
? 1/4 teaspoon of freshly ground black pepper
? 1 tablespoon of fresh chopped parsley

Cooking Instructions

? In a huge saucepan, heat the butter on a medium low heat.
? Saute the celery and onion for 3 minutes.
? After 3 minutes, add the bell pepper and cook for about 1 minute or longer.
? Mix with flour until it is well blended.
? Add the chicken broth and whisk.
? Add the chopped potato and bring the mixture to boil.
? Lessen the heat, seal and simmer for about 15 minutes or until the potato becomes tender.
? Add the chicken and asparagus.
? Cook until the asparagus can be pierced by a fork.
? Add the cream, pepper and salt and mix well.
